Sweet & Sour Jumbo Shrimp
Shrimp in sweet and sour sauce
Serves for 4
Takes 35 minutes
Ingredients:
1 pound peeled and deveined jumbo shrimp
1 cup of coconut milk
2 tbsp WUJU Sweet & Sour Sauce
1 ½ tbsp fish sauce
2 tbsp coconut oil
1 sliced shallot
1 sliced garlic clove
1 thinly sliced green onion
1 ½ rice of your choice
Method:
Cook the rice. Combine 1 ½ cup of rice and 2 cups of water in a medium saucepan. Bring to a soft boil. Reduce heat to low. Cover and simmer for 20 mins, or until liquid is absorbed. Remove from heat. Let stand for 10 minutes.
In a medium bowl combine the coconut milk, WUJU Sweet and Sour Sauce, fish sauce and stir to mix. Set aside.
In a large skillet over medium heat, melt the coconut oil. Add the shallot and garlic and cook, stirring frequently for 2-3 mins, until garlic is pale. Remove from the heat and add it to the coconut water mixture. Give it a stir.
Pour everything back to the skillet and return it to the stove over high heat and bring to a boil. Cook without stirring for 5-10 minutes the mixture will reduce and thicken to about 1/3 cup. Add shrimp and continue to cook by stirring frequently for 3-5 mins, until shrimp curls up and cooks through and the sauce is slightly syrupy.
Serve with a bowl of rice.
